Piyaz with Black-Eyed Beans
1 kg black-eyed beans / 100 g spring onion / Parsley / 300 g tomatoes / 50 g lemon juice / 100 g olive oil / 100 ml pomegranate syrup / 10 g salt / 20 green olives
Soak black-eyed peas overnight. Boil until soft. While the black-eyed pea is still warm, add salt, olive oil and garlic. Add and mix the pitted olives, tomatoes and greens into the black-eyed peas. Add pomegranate syrup before serving.
